Cancun!

My childhood friend has just informed me after thirteen years of friendship that her parents have a time share in Cancun, Mexico! Why she never told me this before is beyond me! You pay by the couple, it's all inclusive, and I am basically peeing myself in excitement! It's going to be, me, Paul, her, and our friend Erick, for seven days and six nights. The thing I am most excited about is scuba diving in warm water. I got scuba certified when I was 17 and have only been able to scuba dive in cold water, which to be honest kind of bites. I am obsessed with the ocean and often wish that I could just be a mermaid so I could forever live there. Scuba is the closest thing I can get to being able to be one. I have already looked at refresher courses online and researched all the scuba diving locations they have. I may die by straining my heart with overexcitement. Can it be June yet?!

Moroccan Anniversary| 2013




For our two year anniversary, Paul took me to his favorite restaurant Meerakesh in Portland, Oregon. It's a Moroccan restaurant that includes the whole experience with belly dancers, eating on the floor, no utensils, and five courses. The food is a.m.a.z.i.n.g! I had the brekka vegetarian, which is a potato vegetable filled wrap with a lentil soup to dip it in on the side. It reminded me of a Moroccan version of a burrito. Paul got the beef breschetta which is like kabob. He talked about it nonstop for a week before we went there. It's his favorite meal.

On our way home we also stopped at Voodoo donuts for some breakfast treats. I got the vegan "ol' dirty bastard" which is chocolate covered donut, drizzled in peanut butter, and topped with oreos. Luckily, that is the only one I ate and I dropped the rest off to my family the next morning. Otherwise  I might have died from a sugar coma. I am not a huge fan of donuts, but I cannot resist an ol' dirty bastard, if you know what I mean...




 Ps. I have this really insane obsession with beards. While Paul was doing his internship he couldn't have one, but now he's growing it out and I couldn't be happier. It looked so amazing at dinner that I had to take a picture. Obviously, he loves it when I incessantly take photos of him, can't you tell?

Sunday Brunch




Had a beautiful brunch with some of my lady friends this Sunday. My friend Kelsey is like Martha Stewart's apprentice. She always throws the best parties and cooks the most amazing dishes. Bless her.

For brunch we all were suppose to bring a dish to share. I of course brought champagne and orange juice for mimosas because lets face it, they are the most important part of brunch. The food was amazing, the set up was adorable, and it was great to spend an afternoon catching up with my ladies, while eating delicious food together. I am definitely going to need to throw a brunch party or a tea party of my own soon.

Year Two| P + K



Not only is January first the beginning of a new year, but it is also the anniversary of one Paul & Kelsey. 2013 officially makes two years since we've been together! Two whole freaking years! This is the longest relationship I've had with someone consecutively (I don't count my four year high school boyfriend who I broke up with every 6 months or so). I honestly can't believe it has been two years! It feels like we haven't been together that long, but also it feels like we've been together forever all at the same time. Paul has blessed me not only by being an amazing partner and friend, but by inspiring me to be a better person. With him I am the person I have always wanted to be. Because of him I am more adventurous, more loving, more open minded, and more selfless. 

What I've learned these past two years is that the best love is finding someone who stands by you even when you're not worth loving. So, I woke up the morning of January 1st, to Paul asleep with his arms around me. This would seem like a normal situation to most people but,  it is definitely NOT normal for Paul. He is such a weirdo that it is impossible for him to fall asleep if someone is touching him. Not even with a pinky toe (believe me I've tried). So after a rough NYE with his buddies buying him shots of fireball, was he able to fall into a semi-coma and sleep through the night with his arms clasped around me. I decided to ignore the fact that he was sloshed out of his mind when he did this and instead pretended that it was a romantic miracle just for our anniversary. 


Love is as rare as the sweet things that come out of Paul's mouth. May everyone find love that is dysfunctional and wonderful. Happy two years to us and to many more to come.

Auld Lang Syne| Happy New Year!

I luckily did not have to work and instead got to spend it with friends old and new alike! I finally got to have a New Years kiss with Paul which I have not been able to do since we started dating. There is nothing better than dressing up for NYE and having drinks with your friends and a kiss at midnight to top it all off. May this new year bring you all happiness and fresh start, "for auld lang syne, my dear,
for auld lang syne."
